Three Forks Market adds smokehouse

A new smokehouse at the Three Forks Market will add a variety of new items for customers.

A new smokehouse at Three Forks' Market is providing a wide variety of new specialty items for the full-service grocery store.

According to Smokehouse and Meat Manager Joaquin Aguilar, Three Forks Market is doing their own bacons, hams, smoked turkeys, assorted snack sticks, brats, smoked cheeses as well as trying other items in the near future.

"We will have a little bit of everything," he said.

The idea behind the smokehouse dates back to when the store opened in 2005 and Aguilar approached owner Rick Lamb about putting one in the store.

Aguilar said it had been a continuous conversation for about 13 years and when he recently returned to the store, they once again started kicking around the idea.

"Now it's taking place and I'm pretty excited," he said.

With the smokehouse now operational, Aguilar feels they will be on a learning curve for a while and seeing what people are going to buy, as well as producing a variety of different items.

The market will also cater to customers who would like to have something special smoked like a prime rib, with Aguilar adding to give him a couple weeks' notice for the specialty item for a party or event.

"I'd be happy to see what I can do for them," he said.

With 21-years in the meat industry, Aguilar said the smokehouse is something you naturally gravitate towards and their quality of the product is high.

While he is partial to applewood, Aguilar said the market is currently using several different woods right now and can cater products to customers who have a preference as well as special items for the holidays like geese.

Because there is a variety of products, Aguilar said the smokehouse process that includes tumbling can take up to 12 to 16 hours.

"It's good stuff. If you smoke it, people will buy it," he said.

The Market is owned by Rick and Val Lamb and located at 510 S Mt Hwy 2 W. in Three Forks.
