Column: With a shoe

When I lived for a short time in the Front Range area of Colorado, I quickly found out the residents of the state have crazy love for locally grown peaches and green chili.

It is not uncommon to see green chili put on burritos, burgers, omelets, and everything in between.

I was no stranger to the dish, having worked at a restaurant specializing in it, and their version was so good I’d probably eat it on my shoe.
